Better Late than Never (at least I hope so)

In my last post, I explained that I needed to make and stock soup to eat it when I changed my Invisalign plates. I completed it and took the pictures, but I should have posted them on time. Better late than never (at least, I hope so).

In my assessment, both soups were executed flawlessly without encountering any obstacles or errors. Amazing right? My first bowl of chili was fantastic. The Beluga Lentils were excellent, and I’m happy about that. Because the larger beans, like pintos, were still a bit crunch, the Bob’s Red Mill bean mix had to cook for an additional 10 minutes in the Instant Pot. That was it: success and no drama!

The soup was fantastic from my first taste. Although, to achieve the smooth texture I love I had to use an immersion blender. Luckily, the immersion blender did the trick. The potato in the recipe made the soup super thick, which I love. It is such a smooth and thick soup. I’ll be making it again.

The one problem I encountered was the ham hock. My grocery store didn’t have one, so I bought a bone-in ham. Then I had to cut the meat off the bone, and I hate handling meat, so that made me a bit nauseous. That is why I’d like to make a vegetarian version of the soup – so I’ll be working on that in the coming months. In the meantime, I’ll check with butcher shops for a ham hock.

Coming up, I’ll be working on egg bites again. I found this recipe: Oven Baked Egg Bites, which I’m hoping will yield a decent replacement for the Starbucks egg bites I love.
